S’mores Pudding Pie

Happy belated national s’mores day friends! Maybe we should just call it s’mores week because I’ve been eating this dessert everyday (#noshame). Growing up s’mores were always a rare treat for me since I lived in the city. My friends and I would always make them with marshmallows roasted over the gas stove! S’mores are one of those desserts that basically define summer. So obviously I had to make a twist on this classic treat, and all I have to say is YUM.

A S’mores Pudding Pie made with Hershey’s Milk Chocolate!

For this recipe, I wanted to make a different version of s’mores. This s’mores pudding pie made with Hershey’s Milk Chocolate is downright amazing. I made a classic graham cracker crust and a toasty marshmallow top, which are the perfect combination with this chocolate filling.

This graham cracker crust is SO simple! I just discovered that they sell graham crackers already crumbled in a box, no food processor needed! Of course you could still use a food processor to crumble up large graham crackers, but hey why strain yourself?

The Hershey’s chocolate filling is to DIE for. It’s so creamy and milk-chocolate-y (it’s a word), the perfect complement for the graham cracker crust. I used cut up Hershey bars to make this pudding! Side note, make sure the pudding is nice and chilled before eating for the best tasting possible s’mores pie experience!

Finally the ultimate topping for this pie would be none other than toasted marshmallows. Placing marshmallows under the broiler setting on the oven makes them the perfect golden brown color and the perfect topper for this pie! Happy baking!!

Ingredients
Crust
  • 1 1/2 cup Graham Cracker
  • 1/4 cup Granulated Sugar
  • 1/4 tsp Salt
  • 6 tbsp Melted Butter
Chocolate Filling
  • 4 bars Hershey's Milk Chocolate
  • 2 cups Skim Milk
  • 1 cup Heavy Cream
  • 2 1/2 tbsp Corn Starch
  • 3 tbsp Flour
  • 1/2 tsp Salt
  • 3 Egg Yolks
  • 2 tbsp Butter
  • 1 tsp Vanilla Extract
  • 1 cup Granulated Sugar
Topping
  • 1 bag Large Marshmallows
Servings: slices
Instructions
Graham Cracker Crust
  1. Preheat oven to 375°F.
  2. Mix graham cracker crumbs, sugar, salt, and melted butter in a medium bowl with a rubber spatula.
  3. Press graham cracker mixture into a 9x9 inch pie plate.
  4. Bake crust for 7-9 minutes, or until firmed up, in the oven.
Hershey's Chocolate Filling
  1. Cut up chocolate bars into small chunks. (this will make it easier to melt)
  2. Combine chocolate, heavy cream, and 1 cup skim milk into a medium saucepan, stirring constantly over medium heat until the mixture comes to a boil. Once the mixture comes to a steady boil, remove from the heat.
  3. In a medium bowl, mix flour, salt, corn starch, and sugar. Set aside.
  4. In a seperate bowl, whisk together egg yolks and remaining 1 cup of skim milk.
  5. Pour egg/milk mixture into the flour/sugar mixture. Gradually add into the chocolate mixture, placing it back over medium heat. Constantly stir with a whisk until the mixture again boils. Let the mixture boil for 1 minute. It should be starting to get more thick.
  6. After mixture has boiled, take off from heat and add in butter and vanilla extract.
  7. Pour chocolate filling into graham cracker crust and cover with plastic wrap. Place pie in refrigerator for at least 3 hours, or overnight.
Marshmallow Topping
  1. After pie has completely chilled, arrange marshmallows on top of pie. (I had to use my entire bag). Place pie in the oven under the broiler setting for 3 minutes, or until marshmallows are golden brown. My broiler was set at 575°F.
  2. Remove from broiler and enjoy!!

    YAY! The blog looks so good and so does this s’mores pie. Definitely not dietitian approved, but always Heather approved – you know I love my desserts. Do you deliver to San Francisco? But seriously…
