Hello my readers!! I hope you’re enjoying all of you leftover Halloween candy! How was everyone’s Halloweekends? I unfortunately had to work all weekend (struggles of being a nurse!) I thankfully still managed to find time to bake. I made pumpkin spice blondies which I’m going to share with all of you today. The best part about them is that they take 10 minutes of preparation and there is no mixer required. They’re perfect when you’re pressed for time, just like I was!
My pumpkin spice blondies are made with a super special ingredient: Trader Joe’s Pumpkin Cookie Butter. It’s a twist on their classic Cookie Butter. Cookie butter is a gingerbread cookie flavor with the texture of peanut butter, for those of you that are unfamiliar with it. It can also be known as Biscoff Spread. Biscoff is found at most major grocery stores. If you don’t have a Trader Joe’s near you, have no fear. You can mix Biscoff Spread with pumpkin pie spice and get the same pumpkin cookie butter goodness. I’d recommend a tablespoon of pumpkin pie spice mixed with the Biscoff needed for this recipe.

These blondies also include pumpkin spice chocolate chips. These little babies are so good. I picked them up from the store on a whim and I am so glad I did. They are the perfect complement to the pumpkin cookie butter in the blondies. I used half pumpkin spice chocolate chips and half white chocolate chips in my recipe. If you do not wish to use pumpkin spice chips, you can always substitute with all white chocolate chips. In my opinion though, the more pumpkin, the better!!
This dessert is perfect for upcoming Thanksgiving/ Friendsgiving parties. It’s simple to make, but is so delicious and will certainly be the dessert everyone pines after at the dessert table. Grab your spatula and some pumpkin cookie butter and get baking!

Pumpkin white chocolate goodness.
- 1/2 cup Unsalted Butter, melted
- 1/2 cup Pumpkin Cookie Butter (or Biscoff mixed with 1 tbsp pumpkin pie spice)
- 1 1/2 cup Light Brown Sugar
- 2 Large Eggs
- 2 cups All Purpose Flour
- 1 tsp Baking Powder
- 1/2 tsp Salt
- 1 cup Pumpkin Spice Chips
- 1 cup White Chocolate Chips
- Preheat oven to 350 degrees. Spray a 9x13 inch pan with baking spray. Set aside.
- In a large bowl, whisk together the melted butter, cookie butter, and brown sugar until combined. Then whisk in the eggs, one at a time, beating well after each addition.
- With a rubber spatula, mix in the flour, salt, and baking powder. The batter will be quite thick.
- Fold in white chocolate chips and pumpkin spice chips.
- Spread the batter into the greased pan. Sprinkle with additional white chocolate and pumpkin spice chips, if desired.
- Bake for 30-35 minutes or until the edges are light brown. Let cool for at least 15 minutes before cutting. Enjoy!
