Arrange strips of bacon on a bacon plate. Sprinkle brown sugar on top. Microwave for about 3 minutes or until bacon is cooked and carmelized.
Pat off excess grease on paper towels. Be careful though, bacon may stick to paper towels! Cut into bite size bits and set aside. (I used a pair of kitchen scissors to cut up my bacon.)
Preheat waffle iron according to its directions.
In a large bowl, whisk together flour, baking powder, baking soda, salt and brown sugar. Set aside.
In a medium bowl, whisk together eggs, vanilla, buttermilk, and oil. Combine wet ingredients with dry ingredients and mix together with a rubber spatula. Do not overmix, batter will be lumpy. Fold in bacon pieces.
Grease your waffle iron and cook waffles according to its instructions. My waffles took about 8 minutes to cook.
Top waffles with warm maple syrup and a sunny side up egg. Enjoy!
