Hello my sweet readers! Happy Friday! As many of you know, my life has been pretty hectic lately! Joe and I got engaged in December. As if wedding planning isn’t stressful enough, we are also building a brand new house, which will be ready for us to move into in August. I have put the blog on the back burner for the past couple of months, but I’m back now and more excited to post than ever!
What are everyone’s plans for the weekend? Brunch, perhaps? Today, I’m sharing a waffle recipe – perfect for brunching. These waffles are a little extra special because they have both brown sugar and bacon in them! Yep, you heard me! Brown sugar bacon waffles. The perfect combination of sweet and savory. This recipe is from The Brown Eyed Baker. I hardly adapted this recipe, but I did cut all the ingredients in half. Her recipe makes 7 large Belgian waffles, too much for just Joe and I. We own a Cuisinart grill with waffle iron plates, and this made 6 small individual waffles.
The only other part of this recipe I changed was how the bacon was prepared. The original recipe called for bacon to be baked in the oven for 15 minutes (ain’t nobody got time for that). I cooked the bacon in the microwave on a bacon plate for 3 minutes topped with brown sugar. It still got that caramelized coating from the sugar, and was just as crispy as being cooked in the oven. If you do not have a bacon plate, please buy one. It’s life changing, really. I got mine from Amazon. You’ll never fry/bake your bacon ever again!
I also topped the waffles with a sunny side up egg, cause what goes better with bacon than eggs?! I warmed up some maple syrup, and drizzled it on top as well. That really pushed these waffles over the edge! Can I eat these for breakfast everyday?

Fluffy homemade waffles made with bacon and brown sugar and topped with a sunny side up egg and warm maple syrup. The perfect breakfast any day of the week!

- 6 strips bacon (I used Kirkland brand)
- 2 tbsp Light Brown Sugar
- 1 1/2 cups All Purpose Flour
- 1 tbsp Baking Powder
- 1/2 tsp Baking Soda
- 1/2 tsp Salt
- 2 tbsp Light Brown Sugar
- 1/4 cup Vegetable Oil/ Canola Oil
- 2 Large Eggs
- 1 tsp Vanilla Extract
- 1 1/4 cups Buttermilk
- Arrange strips of bacon on a bacon plate. Sprinkle brown sugar on top. Microwave for about 3 minutes or until bacon is cooked and carmelized.
- Pat off excess grease on paper towels. Be careful though, bacon may stick to paper towels! Cut into bite size bits and set aside. (I used a pair of kitchen scissors to cut up my bacon.)
- Preheat waffle iron according to its directions.
- In a large bowl, whisk together flour, baking powder, baking soda, salt and brown sugar. Set aside.
- In a medium bowl, whisk together eggs, vanilla, buttermilk, and oil. Combine wet ingredients with dry ingredients and mix together with a rubber spatula. Do not overmix, batter will be lumpy. Fold in bacon pieces.
- Grease your waffle iron and cook waffles according to its instructions. My waffles took about 8 minutes to cook.
- Top waffles with warm maple syrup and a sunny side up egg. Enjoy!
