Soft & Chewy Chocolate Chunk Cookies

Hello my fabulous readers! So long, no post! I just got back from a wonderful vacation to the Finger Lakes in New York. It was the perfect week full of wine tasting and relaxation. Before I went on vacation, I made these chocolate chunk cookies and I just had to share the recipe with you today!

It was pretty much a no-brainer that I had to add a chocolate chip cookie recipe to the blog. They are my favorite dessert after all!  I decided to make these cookies a chocolate chunk version after I had picked up these from King Arthur Flour.  I have been dying to perfect this recipe and I think I nailed it!

Reese’s Peanut Butter Cheesecake

Since I bake desserts pretty much every other day, many of the leftovers go to my coworkers.  The other day one of my fellow nurses requested that I make a peanut butter cheesecake.  I did some research, and stumbled across this recipe .

It looked so good on the screen I just wanted to eat a piece right then.  However, I felt like the cheesecake needed a little something more so I added peanut butter frosting and little mini Reese’s cups.  I absolutely love these little mini cups because they are so stinkin’ cute.  Plus, you can eat like 10 of them and not feel as guilty.

This cheesecake is easy to make but requires time to chill.  Trust me, it is worth it in the end!

Vanilla Bean Cupcakes

If I was given the choice to choose between a chocolate cupcake and this vanilla cupcake, I would choose these vanilla bean cupcakes every dang time.  Considering I’m the girl who is addicted to chocolate, that says a lot!

This cupcake is like biting into a vanilla frosted cloud. It’s so moist, light, and flavorful.  These are made with both vanilla extract and a vanilla bean so they have twice the amount of flavor compared to other vanilla cupcakes.

Funfetti Confetti Cookie Cake

Hey y’all! This Wednesday I bring to you a funfetti confetti cookie cake! Oh my goodness.  This dessert makes any celebration 1000 times better. Birthdays are not complete without it, heck, no celebration is complete without it.  I decided to make this cookie cake to celebrate the Lilly Pulitzer After Party Sale!

For anyone who doesn’t know me, I am obsessed with Lilly Pulitzer.  They have the cutest printed dresses and clothing that are filled with bright colors. This is a major event since there are only two sales a year. What better way to celebrate than with a soft, chewy, colorful funfetti cookie cake?  This cake is loaded with rainbow sprinkles, white chocolate chips, and a buttercream icing that is to die for.

M&M Chocolate Chip Cookies

Happy Sunday friends!!  This weekend has been super relaxing.  Last night, Joe and I celebrated Pittsburgh Restaurant Week at the Grand Concourse in Station Square and it was amazing! We had a perfect view of the city and ate delicious food.  Pretty sure I’m still in a food coma from the raspberry fudge cake we ate for dessert. I need to learn how to make something similar to that ASAP!

After dinner, we drove up to Mount Washington to see the view of Pittsburgh at night since I have only ever been there during the day.  It was stunning! Definitely a must see in Pittsburgh if you’re ever in the area.

Today, I slept in and decided to make these M&M chocolate chip cookies when I woke up.  I made them a couple weeks ago and have been craving them everyday since then!  Fun fact: my favorite candy is plain M&M’s!  So M&M’s mixed with my favorite dessert (chocolate chip cookies) is basically a match made in heaven!
